1/2 cup unsalted butter
1/2 cup shortening
1 -1/3 cups icing sugar
1 -1/3 cups cake-and- pastry flour
75 g pecan pieces
Preheat oven to 350 F. In a large bowl, beat butter with shortening and icing sugar until very creamy, about 5 min.
Using low speed, gently beat in flour just until mixed. Do not overbeat. Then stir in pecan pieces. Drop dough by round spoonfuls, about 1 tablespoon at a time, onto an ungreased baking sheet, keeping them at least 1 in apart.
Bake in centre of pre-heated oven just until lightly browned, about 10 to 12 min. they will not appear completely baked, but will firm upon cooling. Let stand on cookie sheet for 5 min., then remove to wire rack to cool. Repeat with remaining cookie dough. Cookies will keep well in airtight container for several weeks. They also freeze well.
